No Bake Buckwheat Granola

Ingredients:

1 1/2 cups buckwheat

1 cup nuts

1/4 cup maple syrup

28g coconut oil (half of 1/4 cup)

Cinnamon

Cardamom

Salt


Making the granola:


Mix all ingredients in a bowl


Spice to taste (use your intuition)


Add granola mixture to a pan on medium heat


Once pan is hot turn down to medium low


Stir frequently until granola is golden and texture becomes sticky/tacky


Transfer granola to a lined flat surface


Form granola into a tight even layer


Allow to cool for 15-20 minutes until you can pick up the entire layer of granola without it falling apart (you can speed up the process by putting it in the freezer)


Break up granola and enjoy


This makes 3-4 servings


Feel free to use whatever sweetener, oil, nuts, seeds, or dried fruits you want this is just a base recipe.


Measurements are most important to achieve the correct texture of granola


I use raw buckwheat, if you soak the buckwheat make sure it is completely dry before attempting this recipe or the granola will not hold its form
